Ingredients

For the muffin tsoureki:

  • 7-8 slices Stergiou Family brioche cubed.
  • 1 cup milk.
  • 3 eggs.
  • ¼ cup sugar.
  • 1 tube/sachet of vanilla powder (1.5 gr).
  • ½ tsp. ground cinnamon.

For the crumble:

  • ¼ cup brown sugar.
  • ¼ cup flour.
  • ¼ cup butter, chilled.
  • ⅓ tsp. ground cinnamon.
  • ⅕ tsp. salt.

Steps

  1. Grease a 6 cup muffin pan with butter.
  2. In a bowl, beat the eggs, milk, sugar, vanilla and cinnamon.
  3.  Add the brioche to the bowl.
  4. Divide the mixture and fill each of the cups.
  5. Cover the cups with plastic wrap and let stand for 2 hours.
  6.  Prepare crumble in a bowl mixing by hand the chilled butter, salt, cinnamon, brown sugar and flour until you a have a mixture that is like coarse sand.
  7. Preheat oven to 180°c.
  8.  Sprinkle the crumble over the tsoureki muffins.
  9. Bake for 25’ until golden.
  10. Let cool and remove from pan.
