- 1 piece of Stergiou Family marple cake.
- 120 ml brandy.
- 20 g cocoa powder & extra for coating.
- 60 ml fresh milk.
- 75 ml cream 35%-36% fat.

- Put the cake in the blender, and blend.
- Pour the cake into the mixing bowl, add the brandy and knead, ideally using the paddle attachment.
- Lightly heat milk with cream, thoroughly dissolve cocoa in milk mixture so there are no lumps.
- Pour into the mixing bowl and continue kneading until you have a mixture that moulds easily (BE CAREFUL NOT TO OVER MIX).
- Refrigerate the mixture for 1 hour until it is firm.
- Put a generous amount of cocoa powder in a bowl.
- When ready, remove the mixture from the refrigerator, shape into balls and place them in the cocoa
- Turn them over in the cocoa until well coated
