Ingredients

  • 1 piece of Stergiou Family marple cake.
  • 120 ml brandy.
  • 20 g cocoa powder & extra for coating.
  • 60 ml fresh milk.
  • 75 ml cream 35%-36% fat.

Steps

  1. Put the cake in the blender, and blend.
  2. Pour the cake into the mixing bowl, add the brandy and knead, ideally using the paddle attachment.
  3. Lightly heat milk with cream, thoroughly dissolve cocoa in milk mixture so there are no lumps.
  4. Pour into the mixing bowl and continue kneading until you have a mixture that moulds easily (BE CAREFUL NOT TO OVER MIX).
  5. Refrigerate the mixture for 1 hour until it is firm.
  6. Put a generous amount of cocoa powder in a bowl.
  7. When ready, remove the mixture from the refrigerator, shape into balls and place them in the cocoa
  8.  Turn them over in the cocoa until well coated
  9. Place on a platter and keep at room temperatur
